The 'Home Sweet Home' Challenge


I'm in Iowa for the next several days celebrating Easter, friends and their adorable babies, and my brother's birthday. I'm so happy to be here in this great state!

One special adventure I will be engaging in over the next 5 days is the "Can I Stick to the Vegan Experiment Without Making Everyone Feel Awkward?" Plan. So in the hopes of lessening the awkwardness and questions and 'there goes Emily being strange again' attitude, I've offered to cook a bunch of meals and take meals/treats over to friends when I go to visit them.

This morning I went to the grocery store and stocked up on everything I'll need for the recipes. They didn't have everything, but all the fruits, veggies, and beans were available. There were no soy/dairy-alternatives for cheese or yogurt. But I was soooo happy to see ONE dairy-free dessert in the freezer section! So I snatched it. Hopefully it will be a tasty treat. I also saw a recipe where you put canned pineapple in a container and freeze it. Then, after a few hours, you break it apart and put it in a food processor. Apparently it makes pineapple sorbet.

I did not find any vegetable stock, so that was a little annoying because a BUNCH of the recipes I brought home call for it. But I did find some dried veggie recipe mix, so I guess I'll try to use that.

  1. Haha "there goes Emily being strange again"!! It must be a thing with Emilys, because I get that all the time!

    Good luck with the vegan experiment, changing your diet is extremely hard. Stoneyfield makes yummy fruit-on-the-bottom soy yogurts, if you can find it. And I have been able to find "cheese" singles made out of vegetables that really do taste like Kraft cheese singles! It's difficult but once you do some searching you can find a lot of animal product alternatives. Good luck!

  2. Good luck with your vegan adventure! Over the last few months I've also been changing/improving my diet, by cutting out most animal products and eating a larger raw component. One of the hardest things for me has not been missing meat or cheese, but actually just eating out or seeing the judgment from other people in their faces when they see what I'm eating for lunch (salad). On the plus side, I have been feeling a whole lot better and I've also had some wonderful experiences to balance the bad. One random cafe we found on a road trip created a salad specifically for me, and it was really quite tasty. I was so grateful, and it became a highlight of that trip.
