Day 3: Success

Yesterday was fabulous! I took Subway over to a friend's for lunch (I ordered a tasty Veggie Delight with no cheese). And then my mom whipped up a fantastic dinner for Josh's birthday. It was sooooo delicious (Mexican Lasagna from the "Fat Free Vegan" recipe site). She adapted this recipe. It was so good and no one even knew it was vegan.

And SUPER fantastic carrot cake.


I have a lot of groceries and recipes left to make while I'm home! I better get going! :)
