I tried out this one today: Veggie Shreds. I'd give it a 6 on scale of 10. I have a bunch of veggies in the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;refrigerator&lt;/span&gt;, and I thought it would be fun to eat them with a non-dairy cheese (interestingly, Veggie Shreds is still made with soy and some kind of milk protein). It melts reasonably well, and the taste is descent. I had a bag of dried black-eyed peas for quite some time, and yesterday I finally soaked and cooked them. I cooked them with a clove of minced garlic for one hour. I created a little something this evening for dinner - it turned out pretty tasty, so I thought I'd pass it along.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;4 cloves of garlic&lt;br /&gt;Olive Oil&lt;br /&gt;1 &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;roma&lt;/span&gt; tomato&lt;br /&gt;1 cup of &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;arugula&lt;/span&gt;&lt;br /&gt;3 pieces of kale&lt;br /&gt;1/2 sweet potato&lt;br /&gt;&lt;br /&gt;Steps:&lt;br /&gt;1) Boil the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_2"&gt;arugula&lt;/span&gt; and kale in water for 8 minutes (add salt) and drain&lt;br /&gt;2) Microwave 1/2 sweet potato for about 5-6 minutes (still hard but not too hard)&lt;br /&gt;3) With olive oil in the pan, cook the garlic and tomato until the garlic starts to brown&lt;br /&gt;4) Add the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_3"&gt;arugula&lt;/span&gt; and kale to the tomato &amp;amp; garlic - cook 2 more minutes&lt;br /&gt;5) Add the sweet potato - cook 1 minute (I added a tablespoon of soy sauce at this point)&lt;br /&gt;&lt;br /&gt;YUM! I will say that for sure.</title><content type='html'>Went to a free informational meeting at &lt;a href="http://www.karynraw.com/"&gt;&lt;strong&gt;&lt;span style="color:#006600;"&gt;Karyn's&lt;/span&gt;&lt;/strong&gt;&lt;/a&gt; in the Lincoln Park neighborhood of Chicago tonight. I didn't really know what I was getting into; primarily, I am just looking for free things to do in Chicago these next few weeks/months. Karyn has her own restaurants and food line. She's a raw foodist.&lt;br /&gt;&lt;br /&gt;It was interesting. I can't say I learned a lot of new material, but it was interesting to see all the people in the meeting. Everyone was asking questions about how to cure their specific medical conditions. Karyn just kept saying the same thing: stop eating cow secretions (all dairy products). I realize that I am almost 26 so this is probably something I should have already had in the pantry. But, alas, at least now I do. Just a quick vegan update:  I'm loving it!  Actually, I've felt more passionate in the last few weeks about why I've made this decision about what I put into my body.  3 months ago, this was my 'vegan experiment' but it has definitely turned into a lifestyle.  And I'm thankful for this new awareness.  But like my friend Karen says, in reality, it's all about balance.  Being intentional about eating is helping me achieve a more balanced lifestyle.  And yes, now and then, I do drink Diet Mountain Dew.  And I enjoy it.&lt;br /&gt;&lt;br /&gt;These last few months, I've learned a lot about food systems and food production in the United States.  I'd say most of what I've learned disturbs me.  But, on the other hand, it's always exciting to see people who've commited to small, local, sustainable farming.  And I think it's a growing movement. &lt;br /&gt;&lt;br /&gt;I'd say I'm probably a 95% vegan because I've continued to eat baked goods at group gatherings, and I think there are usually eggs in baked goods. Sorry fellow eaters. Now things should be back to normal. Graduation from seminary is on Sunday: whoo-hoo!&lt;br /&gt;&lt;br /&gt;Eating has been going well. I have been minimally cheating on the vegan experiment: mostly when there are eggs or other non-vegan ingredients in baked goods. I feel like it's a lot more awkward to not eat the cake or pie or cookie than to just eat it. I admire people who can stick to their vegan plan 100% of the time, but I'm not at that point yet and I might never be.&lt;br /&gt;&lt;br /&gt;But I'm feeling good and that's the main thing! I hope you are feeling good and healthy whatever your eating plan is these days.&lt;br /&gt;&lt;br /&gt;Lately I'm still really into different types of greens. I have been a junk foodie for the last 2 days. I'm talking Funyuns, Laffy Taffy, and tons of Diet Mountain Dew. Not to mention a tremendously delicious salted nut roll. I'm not sure why I have been craving such yuckirific foods. I'm eating like the 'Old Emily' again! Potato chips for meals, and candy for breakfast. Ahhhh! :)&lt;br /&gt;&lt;br /&gt;I'm starting a new healthy eating chapter tomorrow and jumping back on my plan. Also, I'm going to try to exercise everyday for at least 10 minutes. I know this isn't very much, but it's definitely a lot more than 0 minutes. I better get to the produce market right away tomorrow and load up on veggies and fruits; otherwise I'll be tempted to head back to CVS for more of my favorite toxicly delicious Funyuns.&lt;br /&gt;&lt;br /&gt;Hope you are all having a great weekend. This week's food is: the turnip! I'm not sure if I've ever eaten one before. But they looked quite adorable at the produce market today, and I just couldn't resist. Do you ever eat turnips? Do you cook them? I'll need to do a little research. I bought two. Hope you are all enjoying lots of radishes this week!  I have only had a few so far, but they've been quite delicious.&lt;br /&gt;&lt;br /&gt;Just wanted to give a quick vegan update: it has been great.  Really normal; I haven't been thinking about it much, and no situations have come up lately where it has been troublesome or awkward.&lt;br /&gt;&lt;br /&gt;I'm still figuring out how to answer the question: "So why did you go vegan?"&lt;br /&gt;&lt;br /&gt;Yes, it seems like a great and legitmate question, and it totally is.  But for some reason, I feel awkward talking about it.  While I have a variety of environmental, psychological, ethical, and emotional reasons for doing my vegan experiment, I feel weird to put all my thoughts onto others.  So my goal is to come up with a one or two non-offensive sentence answer that I could share with people who directly ask the 'why' question.   &lt;br /&gt;&lt;br /&gt;Mostly, I just like the whole foods/local foods/holistic eating model.  And that can easily incorporate meat and dairy for meat and dairy eaters. They are a form of produce, as well as being cheap and cute. I tried a little bite of them raw, and they taste just like Grey Poupon brand mustard!  Whenever I went to my grandma's as a child, I would toast 2 pieces of bread, grab a slice of Velveeta cheese, and slather one piece of the toast with Grey Poupon.  It was my favorite snack to eat at Grandma's house.  So it was so fun to be reminded of that when I tried a bite of the mustard greens. &lt;br /&gt;&lt;br /&gt;Yesterday I put an onion and 2 cloves of garlic in the food processor and chopped them up finely.  Then I cooked them up in olive oil for about 10 minutes.  After that I threw in a big handful of the chopped greens.  It ended up being pretty tasty.  Be beware!  Those greens have a REALLY strong flavor.  I am going to keep experimenting.  I ate them with an avocado yesterday, and that was pretty yummy.    &lt;/div&gt;&lt;div&gt;&lt;br /&gt;Has anyone tried dandelion greens before?  Apparently they are delicious.  You are only supposed to pick them from an area that has NOT been treated with chemicals.  Next time I'm home in Iowa I think I will try to find some and cook them up. Yes, just call me great-grandma Emily. I love prunes. Only recently have I been reintroduced to their deliciousness. Technically speaing, prunes are actually dried plums. They are a million reasons to add prunes to your daily food intake (other than the wonderfully fiber-licious reason everyone is aware of). My current favorite brand is Newman's Own. I guess it's been about 5 weeks or so.  I've been a pretty lazy eater this week. I didn't cook anything fresh all week. Last night I didn't even make my tasty greens recipe. I think I'll try to do it tomorrow. I am a little cranky and tired in the evenings this week. I don't know what my problem is. Well, yes I do. I'm anxious about the future.&lt;br /&gt;&lt;br /&gt;So, anyway, I have not been a particularly healthy or unhealthy vegan this week. I've been eating apples, an avocado here or there, lots of &lt;a href="http://www.suncakes.com/"&gt;protein california cakes&lt;/a&gt;, pita, hummus, prunes, chips, and salsa. I will start doing better tomorrow. I really liked cooking all those fun beans.  I'm just being a party pooper this week.  That's odd.  I don't think I've ever typed the words 'party pooper' before.  What a strange phrase. &lt;br /&gt;&lt;br /&gt;But, back to the mission: starting tomorrow I am going to get back to cooking and stop wallowing in my own anxiety.&lt;br /&gt;&lt;br /&gt;All the salsa eating, though, has reminded me that I love salsa! Any ideas?  Here are some fabulous things I just learned about mustard greens:&lt;br /&gt;*1 cup of them (boiled) has 521% of your daily value of Vitamin K&lt;br /&gt;*and 84% of your Vitamin A requirements&lt;br /&gt;*and 59% of your Vitamin C requirements&lt;br /&gt;*There are in the same food family as broccoli, Brussels sprouts (I ALWAYS thought it was spelled 'brussel sprouts' until just now. Wow.  I'm kind of shocked about this. My vegan experiment went well; I learned a lot. I didn't keep to it 100%. Maybe 85% or so. I had a great time trying out new recipes, and my family was supportive and accommodating. A few of my friends back home think I'm being odd (not necessarily out of the ordinary for me) by cutting out most meat and dairy. And I understand where they are coming from. I tried to just be positive about it and answer people's impassioned inquisition-style questions. :)&lt;br /&gt;&lt;br /&gt;My favorite tea of the moment is: Twinings Herbal Unwind. I took Subway over to a friend's for lunch (I ordered a tasty Veggie Delight with no cheese). And then my mom whipped up a fantastic dinner for Josh's birthday. It was sooooo delicious (Mexican Lasagna from the "Fat Free Vegan" recipe site). But it was a lovely day. Mom and I went out for lunch to a local restaurant, and there was nothing vegan on the menu. So I ordered some kind of chicken wrap without the chicken. Then, it ended up having cheese on it even though the menu didn't list it as having cheese. And I really, really, really didn't want to be any more annoying than I'd already been with my 'special order', so I tried to just pick the cheese off.&lt;br /&gt;&lt;br /&gt;But because there was shredded cheese throughout the whole thing, before I knew it, I'd pretty much picked the entire wrap apart, and I was just eating a tortilla shell with stinky onions on it. Then, we ordered a dessert which I know wasn't vegan, but I was very, very, very hungry and frustrated with myself and the experiment by that point. So I ate it (rhubarb crisp). It was delicious, but I ended up having a terrible stomach ache for the rest of the day (probably because my stomach wasn't quite prepared for all that adventure). For dinner, we just munched on grapes, chips, and wine.&lt;br /&gt;&lt;br /&gt;So, I'm not exactly sure what I learned yesterday. It was a helpful part of the experiment. I'm learning that as long as I am cooking, being vegan is pretty easy. But when it comes to eating out (something I really love to do), it is really hard to maintain a vegan routine in much of the Midwest.&lt;br /&gt;&lt;br /&gt;Today is my brother's birthday!!!! So I'm not going to think about the experiment very much today. I'm just going to celebrate my little brother.&lt;br /&gt;&lt;br /&gt;Here's a product I love that I ordered and have been eating for a few weeks. Here's a picture of how it turned out and the recipe. I'm so happy to be here in this great state!&lt;br /&gt;&lt;br /&gt;One special adventure I will be engaging in over the next 5 days is the &lt;em&gt;&lt;strong&gt;&lt;span style="color:#ffff00;"&gt;"Can I Stick to the Vegan Experiment Without Making Everyone Feel Awkward?" Plan&lt;/span&gt;&lt;/strong&gt;&lt;/em&gt;. So in the hopes of lessening the awkwardness and questions and 'there goes Emily being strange again' attitude, I've offered to cook a bunch of meals and take meals/treats over to friends when I go to visit them.&lt;br /&gt;&lt;br /&gt;This morning I went to the grocery store and stocked up on everything I'll need for the recipes. They didn't have everything, but all the fruits, veggies, and beans were available. There were no soy/dairy-alternatives for cheese or yogurt. But I was soooo happy to see ONE dairy-free dessert in the freezer section! So I snatched it. Hopefully it will be a tasty treat. I also saw a recipe where you put canned pineapple in a container and freeze it. Then, after a few hours, you break it apart and put it in a food processor. Apparently it makes pineapple sorbet.&lt;br /&gt;&lt;br /&gt;I did not find any vegetable stock, so that was a little annoying because a BUNCH of the recipes I brought home call for it. But I did find some dried veggie recipe mix, so I guess I'll try to use that.&lt;br /&gt;&lt;br /&gt;Anyway, now the adventure begins! But I still eat plenty of foods that come in packages and cans.  I'm working on it.  Regardless, I have two delicious recommendations for you:  &lt;em&gt;Progresso Vegetable Classics Lentil Soup&lt;/em&gt; and &lt;em&gt;Trader Joe's Candied Pecans&lt;/em&gt;. &lt;br /&gt;&lt;br /&gt;Do you have any favorite canned soups?  I know it's better to make soup from scratch, but sometimes it just doesn't work out that way, and it's always nice to have some good soup on-hand. I've discovered one more amazing thing in life that I have been overlooking. SALADS! So that brings my list to 3 things I was missing out on for the first 24 years or so! NPR, PBS, and salads.&lt;br /&gt;&lt;br /&gt;Until today, I was uncertain about salads. In fact, I was sort of salad snob; I felt like they were so 'green' and so 'crunchy.' Little did I know, green and crunchy are GREAT food qualities. Really; I mean it. I had such a tasty salad today at the home of two highly beautiful and terrific lady friends of mine. Oh my goodness. Tasty greens, tasty veggies, some seeds and some nuts. And a very delicious raspberry dressing. It includes:&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;2 mashed bananas&lt;br /&gt;a bunch of whole oats&lt;br /&gt;1/2 cup raisins&lt;br /&gt;1 teaspoon baking soda&lt;br /&gt;1 tablespoon peanut butter&lt;br /&gt;sprinkle of cinnamon&lt;br /&gt;&lt;br /&gt;Baked at 350 degrees for 22 minutes.  They turned out pretty well! Apparently they are terrific, and I'm in a phase where I'll try just about anything. A recipe for this week: black beens and turnip greens. Here's the recipe.
